ULTIMATE Greek Salad with Quinoa + Avocado

Prep time:  20 minutes  Yield: Serves 8


  • 4 large plum tomatoes, chopped
  • 2 large cucumbers, chopped
  • 1/4 red onion, peeled, chopped
  • 1 bell pepper, chopped
  • 1 ripe avocado, chopped
  • 1-2 cups cooked Quinoa
  • 1 cup crumbled feta cheese

  • OPTIONAL: 1/2 cup pitted black olives (preferably brine-cured), chopped
Organic Ingredients are always best.

How To

1 Cook Quinoa according to package instructions. Let Cool in fridge/freezer.
2 Whisk dressing together. (Can be prepared 3 hours ahead. Let stand at room temperature. Re-whisk before using.)
2 Chop & Combine Salad Ingredients in a bowl. 
3 Toss with dressing. 
4 Serve & Enjoy!

LiveWell Mom Tip: Soak chopped onion in a little vinegar or lemon juice to take away a bit of the bite.
